I think you need the ubuntu-desktop-minimal package.
Maybe try this:

sudo apt update
sudo apt install ubuntu-desktop-minimal
sudo apt remove ubuntu-desktop
sudo apt autoremove

Yes,this is the way after falshing the board.But what is need is that before flashing, there is no libreoffice in the rootfs. Then , after flashing ,we do not need to type the command to remove the libreoffice.

I think you may want to first identify what you don’t really want, like it’s only LibreOffice or other stuff also; then customize Linux_for_Tegra/tools/samplefs/nvubuntu-focal-desktop-aarch64-packages and generate the rootfs package yourself as shown in the guide:
