Impedance value of Orin NX

I would like to confirm the impedance value show by desgin guide(DG-10931)
For example, DG-10931-001_v1.0 Chapter 8 Gigabit Ethernet Table 8-2 show <Trace impedance
Diff pair / Single Ended 100 / 50 Ω (±15%)>.

Should I route pattern with both differential and single-ended impedance value?
Is it possible to route pattern only with differential impedance value when using a differential pair?
