Is it possible to create custom Environments?

None of the Environments listed on the Environments tab have stars. You have a Night Sky, but it is more like dusk (not very dark).

Can you add your own textures? If yes, how? Thanks

You can use a dome light object. The document should show you how to.

I have used the Dome light. I will try that.

Trying this(Screenshot below) or use the auto exposure settings under render settings.

Yes, I discovered I had to modify the Exposure to get it to look right.
