My card is GTS 8800, the core clock is 500M. Does that mean the frequency of the processor is 500M or the small multiprocessor?

It means you have a G80 core model. Its core clock is 500Mhz, but the shading clock is 1200Mhz, and its effective memory clock is 1600MHz.
