If I try to download the driver for Ada-6000 GPU, I see this:

Now I have the Production Branch 572.83
Is that the best for me now ?

You are fine to run the latest drivers, if your system and kit is stable with those drivers. Any drivers that work well are fine. We just recommend some older drivers because we have tested those extensively. So you can start with the latest and always work backwards.
