Why Hue Saturation Value (HSV) is better than Red Green Blue (RGB) for object detection

I have seen many posts discussing why we should use HSV instead of RGB for object detection due to the fact that HSV mimics human vision, so it becomes easier to detect objects. I tried to find a more profound discussion but did not get it yet. I am still unsure why HSV is preferred over RGB for object detection. Can you please share some articles or opinions that deeply discuss this?

Algorithm: RGB space => HSV space => Object Detection
