Can’t use “nvidia-drm.modeset=1” since when this is set it won’t boot up even with one external monitor attached.

You’re running from driver bug to driver bug, the kernel parameter setting now manages to make your gpu think it has no outputs at all.
Please upgrade to a 440 driver to check if that has been fixed meanwhile.

Any easy way to upgrade it (any tutorial) to v440 and to keep v430 driver in case it won’t boot again? This is my work computer and it has to be running in order for me to get my job done.

You could add the graphics ppa:
https://launchpad.net/~graphics-drivers/+archive/ubuntu/ppa
So you should be able to switch between drivers using the Software&Updates application.
I have exactly same problem, upgrade to v440 made no difference
