Is there any documentation around how to have the GeForce Experience app recognize our game? I couldn’t find any information about this on the developer portal nor is it covered in the GFA Settings API.

Can you explain what you mean by “recognize”? If you are talking about the “Optimal Playable Settings” as part of the GFE offering, that is a service that is provided on a per game basis by our Developer Relations teams to the top played games and applications.
